For this exercise, I tweaked the squetch ball to make an exercise ball (about 30 inches in diameter). For the surface material, I used one of the plastic materials made by John F. Ashton-Keller (I have reposted them in the forum here) called "FernPl.mat".
I used this video as a reference to determine the bounciness of the exercise ball.
