Is it possible to paint symmetrically on a symmetrical model? It would cut work almost in half! Thanks.

Ahh one of my old feature requests.....Although to go even further if you had symmetrical UVs you could double the resolution as well.
If you are using projection paint you can effectively do this by painting one half, exporting and then mirroring the image to the other half. It's not quite as elegant but it saves a lot of time.
